Baking the Flavor of Love

Today is all about cake flavors! Your wedding cake should be a reflection of the flavors that bring YOU and your Soon-to-Be-Spouse joy!!

White cake is traditional, classic, and timeless. It’s extremely versatile. (I highly recommend White Velvet if this is your jam). Often when people think about this classic wedding cake flavor, it is a white vanilla cake and will have a little bit of almond extract as well.

However, maybe you aren’t a vanilla, classic, or traditional cake lover… If this is you, and you are hesitating… stop hesitating. Get that chocolate cake*! Maybe you or your person LOVES sprinkles and you want a sprinkle surprise when the cake is cut! (The sprinkles can even be in your wedding colors!!!)

B.Y.O.C. (Build Your Own Cake (or Cupcakes))

One of my favorite things to do is craft custom cake flavors and combinations. One of my favorite Wedding Cakes was for a Halloween Wedding. The couple discussed flavors they like (Citrus, Vanilla, Raspberry, etc.) but they didn’t seem to fit the season (their thoughts).

So, when I did their cake tasting, I made my sea salt caramel. Being a Mid-Western girl, when I think Autumn. I think Caramel Apples. This was their overwhelming winner. White Velvet Cake, Salted Caramel Buttercream, and Sea Salt Caramel Filling and Drip.

My husband and I met in Germany. So we had a German Chocolate Cake**, additionally, I love chocolate cake, and German Chocolate Cake was my Great Grams’ favorite cake. **German Chocolate Cake isn’t German. It is named after the brand of chocolate (German’s Chocolate). My husband isn’t a cake lover, so he didn’t really care about the cake flavor. (He chose the Groom’s Cake alternative). I also baked cupcakes to accompany the cake.

We’re Thrilled Wedding Season is in Full Swing!

I had my first wedding order completed over the weekend, and I’m looking forward to sharing more answers, questions, and the behind-the-scenes of Wedding Season! My garden is in full bloom, and so are all these budding marriages!

Cake Philosophy

I am in love with love. I have always been a dreamy-eyed romantic. I have an overabundance of love and take the greatest pleasure when I can infuse it into my baking. I only bake ONE wedding cake a week. I am a solo shop, and I want my full attention on one couple at a time.

When I bake (or create anything that will be a gift). I think of the couple or recipient. I make an effort to capture their essence. I think of the happiness they will share for a lifetime. I also pray for them. I believe that this positive and loving energy is baked in and is part of the experience. I am a person full of emotions, and I don’t bake for others when I’m unsettled. (I take time to play piano, sing, take a walk through my gardens, pray, and/or call friends and family before beginning to work on projects). As important I feel it is to include all the Love + Joy when I bake, I am cautious to not let any of my negative emotions infuse into my work.

2020 was a Wet Blanket

By February of 2020, just a month after I launched my website publicly. (I had been toying with it for a few years). I had THREE weddings booked. I was thrilled. I began dreaming bigger goals! (One wedding per month!) Then as we all know, 2020 didn’t go as planned. Unfortunately, only one of my three weddings took place.

I know how hard this has been for all the brides and grooms. They are ready to get married, plus newly engaged couples are struggling to secure plans because of the backlog of 2020 weddings. My thoughts and prayers are with all of you. Weddings are stressful enough without the additional challenges.

My other two weddings have been rescheduled (one is this weekend!!! I’m in the midst of making now!!) and another has been added!

I am looking forward to making spectacular memories for my joyous couples.

The Story of the Ocelots

I am often asked, “why, Ocelots”? Is it because of my love of cats? Is it because I have Bengals? Or, on other occasions, I am asked, “what’s an Ocelot”? 

In honor of National Tell a Fairy Tale Day, I thought I would share the behind the scenes of how the Ocelots came to be. It isn’t technically a fairy tale, per se, but it did get its start in Germany. 

Daniel and I met while we were in the Army and stationed in Germany. I was on a small post near Schwetzingen, the Spargel (White Asparagus) Capital of the World, while Daniel was in Heidelberg, the nearest large city. 

I was assigned the additional responsibility of being in charge of my barracks building. Mostly, everyone was well behaved, and all it meant was, I made a cleaning roster, performed shared space inspections, and when Soldiers got locked out of their rooms, I had the master key card to let them back into their rooms. 

Before the end of a week, I realized the master key wasn’t working, but our housing office was unable to program a new key card until the following Tuesday. I made a big announcement at our safety briefing before we were released for the weekend, cautioning everyone not to lock themselves out of their rooms because I didn’t have a key. The only option was to call the fire department, and I informed them I listed the information on the bulletin board near my barracks room. 

On Sunday morning, Daniel was visiting for a lovely homecooked breakfast. I was excited about making some pancakes and showing off my culinary excellence (in my tiny kitchenette that I worked tirelessly to turn into a kitchen because we didn’t have a Dining Facility on my post). 

Knock Knock

I opened the door to find a distressed Soldier who locked herself out of her room. She had placed something in the door to prevent it from locking when she went to do some laundry, so I don’t even remember if she had a phone to call the fire department. 

Well, it also wasn’t just any other Soldier. She was my soldier. She was in my charge and a dear friend. And as a compassionate but mildly annoyed at not heeding my instructions Non-Commissioned Officer, I gave her a little bit of side-eye and a smile before inviting her to join us for breakfast.

Daniel looked at me a little uneasy. “Do you want me to go to the store to get some more food?” Little did he know, I ALWAYS have an incredibly well-stocked pantry. I could easily make more pancakes and eggs. 

“But do you have any orange juice or anything? I think I’d like some orange juice.”

Alas, I didn’t have any orange juice, I didn’t want him to drive the 10 miles to the grocery store and interrupt our morning plan, but he was bent on going shopping. Instead, he asked one more time if there was anything else I needed while he was out. As I thought about it, I knew some meat would be a nice compliment to the breakfast, so I asked him to pick up some Smokey Links. 

“Smoked Lynx? I don’t know where to get smoked Lynx.”

My hearing didn’t discern his meaning, and I tried to explain to him the nature of these smoked sausages that are kind of like hot dogs but even more delicious. I wondered if they weren’t a popular item in Virginia. I hadn’t spent enough time there to know. 

“I don’t know about smoked Lynx, but what about smoked Kodkod?”

Kodkod? I’m not sure what that is, but he really must not understand me. Perhaps it’s a dialect thing. “No, Smokey Links silly, the sausages!” 

“How about some smoked Caracal? Or some Colocolo, he said.” 

“No… Smokey Links,” I repeated for the 12th time. At this point, I was starting to get frustrated. What doesn’t this dude get about it? Go to the store, pick up the meat. It’s probably near the hot dogs or the bacon. It depends on the store. I had only suggested the smokey links because they are tasty, meaty, aren’t spicey, and it’s an easy cleanup. 

“What about some Jaguar?” he said. “Or even some Ocelot?” 

At the point, he mentioned Jaguars it clicked. The lightbulb turned on, and I realized he was messing with me in an extremely dorky but also endearing way. “Ooo! Some smoked Ocelot! That is what I REALLY want. That would be fantastic!” I gave him a kiss and a pat on the butt, and he was out the door and on the way to the store. 

While Daniel was out to the store, I got to work on the pancakes, set the table, and watched a little bit of Anastasia with Alicia. A full hour later, there is another knock at the door. 

Daniel is panting heavily. 

“Oh my goodness, honey, are you okay‽ What happend‽ I asked.”

“Ocelots. Are. Fast.”

Dead. I was laughing so hard. In the hour it took Daniel to make a 30-minute trip, I had forgotten entirely about the “Smoked Ocelot.”

He then proceeded to tell me this long-winded story about how he was surprised he was able to find the Ocelot in the commissary. Then he got it into his car, but when he got onto the Autobahn, he decided to put the top of the convertible down, and the Ocelot escaped. ‘Ocelots are fast.’

From that day forward, I have called him Mr. Ocelot. A week or so, he called me Mrs. Ocelot (all the pitter patters of feelings), and a couple of weeks later, he proposed. 

To be completely honest, we’re kind of weirdos about it. By which I mean, we are committed to it 😂. When we talk to each other, our hands are paws, and if we talk about children, they are cubs. Before we got engaged, we discussed it. He said a condition in getting married was that our first girl would be named Katherine because it is a family tradition. And I agreed as long as we can call her Kitty.

Another example is I used to say, “get your paws out of the food!” If Daniel tried to sneak bits before I have finished preparing a meal or treat. So maybe it’s not as weird as I led on, but we continue to keep the tradition alive.

A Magical Birthday

One of my sweet nephews turned seven recently. He has just started reading “Harry Potter” and was able to watch “The Chamber of Secrets” this week! I have been waiting on pins and needles for one of my nieces and/ or nephews to get hooked so that I can share the magic with them.

I asked him before Christmas what kind of cake he would like. I had planned on making fun sorting hat cupcakes. He was precise with his request, and it quickly changed my course. ‘I’d like a vanilla cake, I guess, with strawberries. So it tastes fresh. Sometimes (I think) cake is just so sweet.’

While I had my heart initially set on the sorting hat cupcakes, it was much better to prepare something exactly as he wanted it. I would find something else to create a magical element. (Besides, he’s only seven, he isn’t old enough to be sorted yet. #hufflepuffforlife). I even practiced by attempting to mold a tootsie roll into a sorting hat at lunch one day. Some of my friends and family immediately knew it was the sorting hat. Not everyone was convinced. They may or may not have thought it looked like Poo. So I made a poop Emoji out of another tootsie roll.

When I recovered from the fixation on the cupcakes, I realized I needed to make this as a whole cake instead. I wanted to bake my nephew some custom cookies in a wizard-like font to top his extraordinary cake.

I designed five cookie-cutters to spell out his name and capture his new age! There were some trials and errors in the designs. I cursed myself several times because I kept forgetting that you have to mirror numbers and letters to have them cut properly. It doesn’t matter for symmetrical letters, but in strange fonts, even a capital “A” is noticeable when printed backward. (Oops!)

Next came the cake itself. When I think of Vanilla cake and strawberries, I immediately imagine strawberry shortcakes. Especially the shortcakes in the grocery store that look like little fruit cups. (I have a basket weave shortcake pan, but I wasn’t sure that was the right call for a seventh birthday party). Instead, I baked a cake that would taste similar, and I planned to layer in the strawberries like a giant shortcake.

I baked the cake in two layers. (I should have baked it in three-layers instead of cutting the cake, it would have baked faster, but I only have two pans 10-inch pans). Due to the birthday boy’s aversion to overly sweet cake, I opted to use a thick whipped cream in lieu of a traditional frosting. I sliced and macerated the strawberries with some fresh lemon juice and a light dusting of sugar. I let the berries hang out while I sliced the cake and whipped the cream. Waiting allowed the juices to come out of the fruit and make a lovely light syrup for the cake.

With a cool cake, sliced and ready, I piped a dam of whipped cream around the edge of the cake. Next, I used a silicone basting brush and spread some of the excess strawberry syrup on the cake, followed by filling in the whipped cream and topping it with the sliced strawberries. I repeated this X3.

At the top of the cake, I used a large star tip to pipe the thick cream over the whole surface. I reserved 7 of the most beautiful strawberries to adorn the top of the cake. I hulled them and filled the void with some more whipped cream.

Earlier in the morning, I baked the sugar cookies for the cake. When they were cool, I sprayed them with edible gold paint and inserted some toothpicks in their base.

The birthday boy was coming over for a seafood feast (at his request), so I made a few other treats to compliment the cake and bring more magic into the day. I used a frog mold to make some fruit gummies and some chocolate frogs. The gummy frogs turned out great. (They felt like frogs). The chocolate frogs had very delicate front legs. Only one survived, but they were still tasty, and everyone enjoyed them.

We also had some divination butterbeer. (Add a drop of food color in the bottom of a glass under some ice and pour over your beverage for a colorful surprise).

I also sent them home with a dozen cookies I stamped with some cookies presses I got for Christmas. The impressions weren’t as crisp as I had anticipated (because of the fine details). It was a completely magical afternoon!

Sweet Arctic Wonderland

A little over a month ago, my SIL asked me if I could bake some (5-dozen) Christmas Cookies for a school event. She gave me full creative licensing, and I was off to the races. I had recently acquired some hexagon cookie cutters and knew I HAD to use them for this project. I’ve seen a lot of creative holiday themes on squares and rectangles, so I knew I could make something work on a hexagon too.

I spent an afternoon looking around for various ideas. I saw penguins and snowmen that were adorable. I even sketched them out. But then I became besotted with a precious polar bear. The polar bear led me to think about other arctic creatures. So, of course, I HAD to make a narwhal (or two) because the narwhal is my favorite real sea creature. (Otherwise, it’s mermaids).

I thought a little longer and remembered that I have an adorable yeti that sings “Winter Wonderland.” I felt my set was complete! A half dozen creatures and I could make ten of each. As I was looking at the color scheme of my sketches though I realized it was far better if I narrowed my scope. So I whittled it down to Polar Bear, Narwhal (x2), and Yeti.

I shared my sketches with my SIL, and she was just as in love as me. Her oldest (6 going on 13) then requested a cat in a Santa hat. So I knew I’d make him a couple of special ones. (Snow Ocelot-A fictional cat).

I wanted to try to use the fewest colors I could for the simplicity of design and execution. So I wanted half on a teal background and the other half on a gray background. I had initially intended to have several plain cookies in solid teal and gray. I thought some people might not want to eat the cute cookies, plus I knew it would also help keep the cost down for my SIL.

About two weeks before the cookie order was due, my SIL found out they were going to do a cookie decorating contest, and parents were asked not to bring dessert, so she reduced her order to one and a half dozen for a Christmas party she was throwing. Since it was a smaller order, I opted to do all creatures.

I piped the different animals one color at a time and in layers in places to create some depth. I was giddy once they were all decorated. Patience is a requirement with cookie decorating, I was ready to add faces and eyes, but the frosting takes time to set. I arranged them around in alternating patterns for fun before I headed to bed.

The next morning I got up bright and early to add all the fine details with my handy dandy edible markers.

I freehanded the snow ocelot by looking at my original logo sketch by only focusing on the darkest parts. I was happy to only have two ocelots in the bunch, but it was entertaining to draw in such detail on a cookie!

With all the fine details added, I painted over the yellow horns with some edible gold paint, and they were all finished!

Chillin’ With My Gnomies

When ordering the elf cookie cutters around Thanksgiving, I looked around at other offerings (because I like to qualify for free shipping or spread shipping costs across a few things when I can). I stumbled upon these adorable Gnome and Snowflake cookie-cutters! I couldn’t resist, so I added them to my cart and offered to make them for the same party as the Spiked Cocoa Cupcakes. Little did I know, my girlfriend adores Gnomes! It was kismet.

I loved taking the time to create different designs on the hats of the gnomes. (Side note, does anyone remember David, the Gnome?) I also wanted to make a couple of designs for the snowflakes because snowflakes are all different.

One of my favorite frosting piping tips is the leaf piping tips. Piping all the leaves on the wreath was a blast. Then I got to add tiny red bead sprinkles and some slightly larger silver balls.

Then the next day, when my creations were dry, I dusted everything with various shades of luster dust (aka Christmas magic), and the cookie platter was ready for delivery!

Who Spiked the Cupcakes?

One of my girlfriends asked if I could make some boozy cupcakes for her annual Christmas Party (9? years running). I looked through a variety of different recipes on the internet and kept circling back to the thought of keeping it simple, packed with flavor, and seasonal. One of my favorite winter drinks is a peppermint mocha, and who doesn’t love a steamy mug of cocoa topped with marshmallows or filled with some whipped cream?

For the base of my cupcake, I used my favorite chocolate cupcake recipe. It is rich and chocolaty and always seems to be a crowd-pleaser. (The secret ingredient is coffee. Tasty, delicious dark coffee from a local roaster here in Richmond. Dark as Dark from Blanchards).

In my busy baking haste, I neglected to take photos as I was in the process of making these delightful concoctions. However, I’ll still do a quick overview before sharing the final product images.

After the cupcake base layer, I had intended to have a lovely light but stabilized whipped cream frosting. Friends, I met this task with failure, and I had a quick deadline. (Probably the reasons why I wasn’t busy snapping photos along the way).

Instead of my concept frosting, I went with an ol’ standby that is ALWAYS delicious, and ALWAYS turns out. Buttercream. I flavored it with equal parts vanilla and peppermint extracts. (As I had intended to do with the failed batch).

While the cupcakes were in the oven, I spread some chocolate out, added a layer of peppermint candy melts, generously sprinkled some crushed peppermint, and let it set up.

Once the cupcakes were cooled and frosted, I cut the peppermint bark into wedges and stabbed stuck the piece in the frosting.

The most fun part was adding the tiny bit of tipsy. I ordered some pettite pipettes. (They hold a volume of 4ml). For reference, there’s ~ 44ml in a standard shot. I added the pipette of peppermint schnapps, and the cupcakes were complete!

The best part was, they were popular enough to get a second order!

March of the Toy Soldiers

One of my coworkers has been looking for a giant Toy Soldier for several years to complement our drummer tree. In honor of that, I found a Toy Soldier cookie cutter as a surprise for her.

I also love making Gingerbread. I love it when it is soft, full of flavor, and has just a little bit of snap when you bite into it. I had to dive deep into my mind (and Pinterest) thinking of how I would decorate the Soldiers. I found myself a little stumped. Nothing seemed quite right.

Then, by a stroke of luck, I attended our annual Holiday party at The Jefferson Hotel, where the perfect Soldier greeted me.

When I got home, I compared him to my adorable cutter, and I realized I had a small problem. My Soldier cutter has very short legs. I was going to have to choose boots or pants. I thought about drafting some renderings on my computer or sketching them, but I was eager to start icing the cookies.

I decided to try to make medium height boots and have a glimpse of the pants showing. First, I piped on some faces, and then I piped my hats and boots!

Before the hats had a chance to set, I added a flourish of holly berries. I prepped early in the season and made a couple hundred, so I could use them as often as I liked. (I LOVE feeling prepared).

I added the red jackets, blue pants, and some blue cuffs on the sleeves of the jackets. I thought there needed to be a touch more blue in the uniform (making up for the very short legs).

With the soldiers fully dressed, it was time to add details and embellishments. I tried a few different designs before finalizing. Gold cords around the cuffs, buttons, and shoulder tassels for the win! The other elements were a little too delicate for the amount of replication required.

I am also an Army veteran, so I got a kick out of lining up my soldiers in formation, boxing them in along with their squads, and deploying them. When they were dry the next day, I was able to draw on their faces (with a fine edible marker). A lot of Toy Soldiers have a mustache, but I’m not fond of it. So I kept a crisp, clean-shaven look.

North Pole Pizza Delivery

Earlier this Advent season, I made a few elves to welcome back my nephews’ scout elf, Truck. The cookies were a hit! The boys loved them. The youngest even exclaimed, “they looked like Truck!” I genuinely love bringing joy to their little faces. Seeing them full of joy, wonder, and excitement is one of my favorite things about being an auntie.

To keep going with the elves, I knew that sometimes the elves get into mischief, and sometimes they bring treats. I also know that sometimes parents are up so late doing the dishes that the elves don’t have enough time to make their trip back to the North Pole. I thought an Elf Pizza delivery would be a great way to help them out and a fun way for me to secretly contribute to the fun!

I’ve seen a lot of “pizza” cookies on Pinterest and Instagram made with royal icing. I prepared to do this but then really liked the idea of building the pizza with actual flavorful toppings.

The dough base is a gingerbread cookie, which I topped with deep red royal icing “sauce.” I shaved some white chocolate for the cheese and placed it on the wet icing so it would stick. Finally, it was time to make my crowning jewel, the pepperoni. To make the pepperoni, I used the backside of an icing tip and cut circles out of Fruit-by-the-Foot. When my cookies were dry, I used edible markers (black and brown) to put the spices on the pepperoni.

My final touch on the cookies was using my kitchen torch to melt the “cheese” and crisp a little of the pepperoni. I wasn’t sure how noticeable it would be, but it was fun!

To make the pizza’s official, I created a pizza box with my Christmas logo and cut small squares of checkerboard wax paper to line the tiny pizza boxes. (Love, love, love)!

Squad Goals

It was recently my Mother-in-Law’s (MIL) birthday. It was a birthday divisible by 5, so my Sister-in-Law (SIL) wanted to do something unique so she planned a girls’ trip for all of the “daughters” and mom. Technically, my MIL has two children by birth, but then, of course, she has a Son-in-Law (SIL) and a Daughter-in-Law (DIL, aka me). Two of my SIL’s childhood friends are also considered daughters in our Hawthorne sister crew. (Love, Love, Love them). 3 of the 4 of us live in Virginia, and one lives out on the West Coast.

My SIL had another brilliant idea to make t-shirts for everyone to wear on our trip to Williamsburg. We passed a few ideas back and forth and settled on bold “MOM daughter #SQUAD” design. It’s been a while since I’ve made a heat transfer design. Aside from cutting the backing material instead of the vinyl on the first pass, all went smoothly. I especially love how brilliant the gold sparkles shine!

Once I made the t-shirts, it was a natural choice for Cookie designs. I wanted to bring us a sweet treat. Something understated but sentimental and directly intended for mom.

I’m still really digging using this hexagon cutter. Maybe the novelty will wear off in a few weeks, but for the moment, I am obsessed with the shape. At first, I thought I would pipe directly on the cookies (like I usually do). My inner-perfectionist had a different idea. While my cursive is neat and it is undoubtedly legible, it didn’t quite “POP” the way I had envisioned.

So I got creative, and I engraved the cookies from a stencil before piping on them. It was MUCH more effective though I did have one cookie that I didn’t flood as fully as I should have. (So many lessons to learn along the way).

The last details were to add a couple of Holly Berry clusters and some red beads around the edge, and then I brushed them all over with some luster dust. (I LOVE when things sparkle, another trend for me right now). 

We all had a fantastic time on our trip, our shirts all fit, and the cookies were delightfully demolished! (My favorite compliment).
